Holiday Dinner Heating Instructions

New York Strip Roast & Prime Rib Cooking Instructions
Remove roast from pan, let sit at room temp for 30 minutes then place on wire rack over a sheet pan. Cook at 250⁰F checking roast after approximately 2 hours (all roasts are different adjust time accordingly to size/thickness). Using a meat thermometer, check internal temperature until desired temperature is reached, see temperatures below. Take roast out 5⁰ before desired temperature is reached & let rest at room temperature tented with foil for at least 30 minutes. This allows the roast to retain its natural juices. 
    Rare – 120⁰-125⁰
    Med-Rare - 125⁰-130⁰ (Recommended by Knight’s)
    Medium - 130⁰-135⁰
    Med-Well - 135⁰-140⁰
    Well Done - 145⁰+ 

Au Jus
Place contents into a sauce pan and bring to a boil.

Roast Turkey & Old Fashioned Ham
Remove plastic lid (if applicable) and cover with foil. Heat at 350⁰ for 45 min. – 1 hour or until internal temperature reaches 165⁰.

Traditional Stuffing
Remove plastic lid (if applicable) and cover with foil. Heat at 350⁰ for 30-45 minutes or until internal temperature reaches 165⁰ (Large portions may take longs). 
For crispier stuffing: Remove foil and bake for additional 5-10

Mashed Potatoes
Oven Method: Remove plastic lid (if applicable) and cover with foil. Heat at 350⁰ for 30-45 minutes or until internal temperature reaches 165⁰ (Larger portions may take longer). 
Stovetop Method: Remove from package and place in a sauce pan over medium heat. Add a little bit of milk (if necessary) and stir often until internal temperature reaches 165⁰. 

Turkey Gravy
Stovetop Method (for best results): Pour contents into a sauce pan and simmer over low to medium heat until hot (165⁰). Add water or turkey/chicken stock and whisk (if necessary) to achieve desired thickness and smoothness. 
Microwave Method: Heat on high for 1-2 minutes at a time, stirring in between, until temperature reaches 165⁰. 

Mac-n-Cheese & Au Gratin Potatoes
Remove plastic lid and cover with foil. Heat at 350⁰ for 45 minutes to 1 hour or until internal temperature reaches 165⁰. Optional: Remove foil and place back in oven for additional 5-10 minutes and let topping crisp to a golden brown.

Vegetable Medley
Remove plastic lid (if applicable) and cover with foil. Heat at 350⁰ for 15-20 minutes or until hot mixing occasionally.

Knight’s Rolls
Optional: Remove from bag, wrap in foil and heat at 350⁰ until warm throughout, approximately 5 minutes.
